Honey Chipotle Glazed Salmon

I love the sweet hot bite of the honey chipotle chicken crispers at Chili’s and I was wondering how I could incorporate it into our menu, but healthier so I came up with this recipe for Honey Chipotle Glazed Salmon and I am sooo excited to share it with y’all for today’s Mouthwatering Monday.

  • 1 large salmon fillet, cut in 1/2 or 2 (8 to 10 oz fillets)
  • 1/4 C olive oil
  • Juice from one medium size lime
  • 4 garlic cloves, minced
  • 2 chipotles in adobo sauce, chopped
  • 1 Tbsp adobo sauce
  • 1/4 C honey
  1. Whisk together olive oil, garlic, 1 chopped chipotle pepper and lime juice. Place salmon in a dish and coat with the olive oil mixture, marinate for 20 to 30 minutes at room temperature.
  2. Remove the salmon from the mixture and cook it in a medium-high heat skillet, that has been lightly drizzled with olive oil.
  3. While the salmon is cooking, mix the honey and adobo sauce and 1 chopped chipotle in a bowl and set aside.
  4. Cook the salmon about 7 minutes on each side, until the salmon is opaque on the sides and flakes with a fork.
  5. Remove the salmon to a plate and then drizzle with the honey chipotle mixture.

The salmon is moist, flaky, sweet and spicy and absolutely tonguegasmic!

It is official that I am a kickball coach/mom and my daughter, is a baller… a kickballer that is.
She has got legs and those muscular little legs were made for kickball.
We have opening ceremonies and pictures tomorrow morning so there will be many more pictures and I’m sure stories to follow.

*Monkey is still limping, but the x-rays have showed no abnormalities so the ortho isn’t scheduling us. Our pediatrician has re-subbed two new diagnoses/requests to him… so y’all please pray that he’ll pick one and decide to see us. I really want to know why my 2 1/2 year old has been limping for a week and a half now. Thank you for all of your encouraging thoughts, prayers and stories. Y’all are an amazing group of people

Garlic and Soy Baked Chicken Thighs

Heather is one of my favorite people.

She is down to earth, talented and sweet.  When she posted this recipe on her site, Home Ec 101, I knew that I had to try it and I’m so glad that I did. It is a massive hit at our house!  Nathan actually ate 3 thighs in one sitting and they are truly tonguegasmically, mouthwateringly delicious! Plus, with chicken thighs going for about $5.00 a package, they are significantly budget friendly! (YAY)

Garlic and Soy Baked Chicken Thighs

Prep Time: 2 hours, 5 minutes

Cook Time: 35 minutes

Approximate Time: 2 hours, 40 minutes

Yield: 6 - 8 chicken thighs

Garlic, Soy Sauce, Honey and Fresh Ginger baked Chicken Thighs - quick, easy, delicious and budget friendly!

Ingredients

  • 6 – 8 chicken thighs (bone in or boneless skinless)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey
  • 1/2 Tbsp fresh grated ginger
  • 2 green onions, chopped
  • 5 garlic cloves, minced
  • crushed red pepper (1 tsp. or more, to taste)

Instructions

  1. Whisk together the soy sauce, honey, onion, garlic, ginger and crushed red pepper
  2. Place the chicken thighs and your marinade into a large ziplock baggie and marinate for 2 hours to overnight.
  3. Turn the bag halfway through so that all the thighs get equal drenching time.
  4. Place the thighs skin side up in a baking dish that leaves just a bit of room, but not too much, between each chicken thigh. Pour the marinade over the thighs.
  5. Bake at 350°F for 30 – 40 minutes.
  6. Rachel Note - make sure that if you're using boneless, skinless thighs that you check the temperature at about 20 minutes - you don't want to overcook.

  7. Garnish with more chopped green onions, we do.

I served this with green beans and a small green salad, it was amazing. Seriously y’all, you must try this dish! I will absolutely be making again for our house! NOM NOM NOM!!
