Yesterday, the family and I got to attend a special event at the FREEBIRDS that will be opening here in Corpus TOMORROW!!!!!!

The place was packed and loud and fun and funky.  The food was hot and fresh and delicious!

I haven’t been at a restaurant “opening party” since I was the one managing the restaurant and it was nice to be on the other side!  I have to give them major kudos;  they know how to do it right.  Their team is professional and friendly, the managers were enjoying themselves and the staff members were adorable and at the top of their game!  The atmosphere was loose, laid back, fun, welcoming and friendly.

Here’s one of them making my steak burrito:  spinach tortilla, rice, black beans, salsa, mixed cheese, sour cream, red onions, guacamole, lettuce and steak. NOM NOM NOM (no, I did NOT finish it)

This is on the side of the island that holds the sauces and soda machines (WHICH HAVE DIET DR. PEPPER!!!!!)

I love this saying, it’s so southern.  It makes me think of Southern Grannies and kitchens and family and love.

It was a delicious evening and I will be taking the kids to the opening tomorrow so that I can get another burrito; I think I’ll try the cayenne tortilla this time with a great big Diet Dr. Pepper!

Making Doughnut Holes at Home

Doughnut holes are one of my kids’ favorite treats.  They love the bite sized bits of crispy, doughy, sugary goodness and I, well, I just love them, too.

There are so many recipes for doughnut holes but this is one of my favorites for weekday  mornings because it’s quick and easy.  This is one of those great kid friendly recipes, easy to make, fun to make and BEST OF ALL.. delicious to eat!

You need a can of biscuits, 1 can of 10 count buttermilk makes 40 doughnut holes!!  Cut each biscuit into quarters.

Drop into 375 F hot oil

It takes about 3 minutes to turn the dough into these delicious hot golden bites of  crispy, doughy deliciousness.

Remove them from the oil and place them on a paper towel for a moment to allow the oil to drain.

Toss in cinnamon sugar mixture and serve.

Recipe: Doughnut Holes

Ingredients

  • 1 C sugar
  • 2 Tbsp cinnamon
  • 1 (10 ct) can buttermilk biscuits
  • 375 F hot oil

Instructions

  1. begin heating oil in skillet or fryer (cast-iron, if you’re lucky)
  2. cut each biscuit into quarters, and roll into balls (they will look really tiny, but they puff up when they cook, trust me)
  3. when the oil is ready (375 F) gently drop about 6 doughnut holes at a time into it.
  4. using a wooden spoon, slowly roll the dough in the oil until it’s golden all over, remove from oil and place on a paper towel lined plate while you drop in more dough
  5. toss with sugar/cinnamon mixture

Quick Notes

Serve and enjoy!!!!

* drizzle with powder sugar glaze * drizzle with orange glaze * toss with powdered sugar * coat with a chocolate glaze * use your imagination!

For My Daughter on Her Last Day of Kindergarten

I can’t believe it’s here; your last day of kindergarten.
It seems like just yesterday that I wrote this post about your first day of kindergarten.

You have grown and changed so much this year, experienced so many milestones:

  • learned to read (and holy cow do you read! I think you read better than your Daddy)
  • lost your first two teeth
  • made new friends
  • learned to ride a bike without training wheels
  • learned addition and subtraction
  • navigated a confusing elementary school all by yourself

There are so many more things that you’ve accomplished this year and I foresee so many more in your future.

My love, my daughter, my first born… we could not be more proud of you.
