In 1986 my aunt was diagnosed with stage 4 breast cancer and in 1991 she lost her battle. She was 51 years old.

I still remember my aunt so vividly. Her beautiful hand writing on recipes my mom still uses. Watching her standing behind the counter of her doughnut and pastries shop while my mom painted a mural on the wall. How she sat next to me assembling the Hello Kitty miniature doll house she bought for me. Her incredible hospitality and generosity.

Since it is National Breast Caner Awareness Month and I just turned thirtysomething I will be getting my baseline mammogram this week. In honor of my aunt, I would like to share with you one of her favorite recipes:

ANGEL WHISPERS

Ingredients:

  • 3/4 cup Pillsbury Soft as silk enriched cake flour bleached
  • 1 tsp. baking powder
  • pinch of salt
  • 1/3 cup butter or margerine
  • 1/2 cup granulated sugar
  • 1/4 tsp. vanilla
  • 2 eggs (separated)
  • 1/4 cup milk

1. Preheat oven 420°.

2. Sift all dry ingredients together (flour, salt, and baking powder).

3. Cream butter or margarine, sugar and vanilla until soft and light colored.

4. Beat in the egg yolks and slowly fold in the dry ingredients and milk.

5. Beat egg whites until they are fluffy and stiff then fold it into the mixture immediately.

6. Line muffin pan and fill each muffin cup half way.

7. Bake in pre-heated oven for 12-15 minutes. Makes 8-10 muffins.

My aunt preferred them on their own, but you can frost them with your favorite icing if desired.

NOTE: If you don’t have any Soft as Silk cake flour then you can simply add for 1/4 cup of corn starch.

Sizzling

This is my first time entering an I Heart Faces photo contest :-) How could I resist?  Food, Photography and the chance to win something ;-) Yes, please.

The Contest is open until NOON CST tomorrow (Thursday), if you want to enter.. but, um.. don’t ;-) then, the odds are better for me :-)

Nancy’s Pineapple Salad

My name is Kim Hardwick and I am a mother of two boys.

I started dating my high school sweetheart, who is now my husband, a few months after his mother, Nancy, had finished chemotherapy for breast cancer. The first time I talked to his mother I thought she had the sweetest voice I had ever heard. She has been in my life for fifteen years now and I am blessed to be her daughter-in-law.

I remember the first Christmas dinner I shared with my husband’s family. There was this interesting looking dish that was topped with marshmallows and cheese that everyone devoured like it was their last supper. The marshmallow and cheese combination seemed strange to me so it took several years for me to try it.

It was delicious. The tart, sweet pineapple and the sharp cheese with soft sweet marshmallows is fabulous


Recipe: Nancy’s Pineapple Salad

Ingredients

  • 1 can crushed pineapple
  • 2 egg yolks
  • 2 Tbls flour
  • 1/2 c. sugar
  • 1/4 Tsp salt
  • 1 bag of mini marshmallows
  • small tub of cool whip
  • 8 oz. grated Longhorn cheese

Instructions

  1. Mix flour, sugar and salt in a large sauce pan then add crushed pineapple.
  2. Add 2 beaten egg yolks and cook on low heat until thick.
  3. Transfer cooked mixture to a 9 x 13 in pan and refrigerate until cold.
  4. Spread tub of cool whip over the pineapple mixture.
  5. Add a layer of marshmallows then top with cheese.
