There are no diamonds, flowers, chocolate that could be more beautiful, more precious, more love filled than me through my children’s eyes and hearts.

 

Happy Mother’s Day to each of my Mama friends, may your every day be filled with joy and love and dreams and laughter and the knowledge that because of you, the world is better.

Kitchen Blunders

This tweet came through my stream yesterday from Hollee (one of my favorite people), after I had put on Facebook that I had spent hours baking my favorite Homemade Granola that I’ve made a kajillion times only to have the recipe go awry somehow.

I tasted the granola, that I was going to gift to the Teachers at Princess’ school for Teacher Appreciation week, and it was awful — it had a sort of plastic-y taste.

Frustrated and disappointed were just the tip of the emotional ice-burg.

Her tweet got me thinking though, do y’all really think that everything I make always comes out perfectly and deliciously?

That thought sent me (and still does) into gales of much needed laughter.

Oh y’all — I am so far from the perfect cook — I’ll get so excited about a new recipe and spend time creating it and cooking it only to taste it and think– “Well, damn.  That’s about 10 shades of wrong”

There are nights where Nathan gets all excited about a new dish that I’m making because of the smells or the way I’ve been hyping it up only to end up with a Supreme pizza from Pizza Hut instead.

Hollee got me thinking — would y’all like me to share these blunders and then possibly, if I figure out what I did wrong, how I fixed it?

Would y’all be willing to share YOUR kitchen damns?

I’d love to hear about them and we’ll probably all be better and more confident for seeing that others aren’t all June Cleaver-Martha-Betty Crocker all the time, too.

Cinco De Mayo Recipes

Thursday is Cinco De Mayo.

That’s 5th of May for those of you who don’t know a lick of Spanish or Spanglish (as the case may be)

Now for today’s history lesson:

Cinco De Mayo is a holiday held on May 5 ththat commemorates the Mexican Army’s unlikely victory over French forces at the Battle of Pueblo on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín.  (not to be confused with Mexican Independence Day, which is September 16th.

Now that history is out of the way (Aliah, feel free to speak up and weigh in, my history-goddess-teacher-friend)

I thought I’d share how most people down here in South Texas will be celebrating –

There will be tequila in the form of ‘ritas

There will be the best guacamole ever

and there will be fajitas and tacos and spicy shrimp taquitos.

I thought that in honor of Mouthwatering Mondays and Cinco de Mayo, I’d share a few of my favorite recipes with y’all:

Appetizers

Roasted Tomato Salsa

Jalapeno Margaritas

Margarita on The Rocks

: Traditional Rocks Margarita
  1. 2 oz Patron Silver
  2. 1 oz Cointreau
  3. 1 oz fresh squeezed lime juice
  4. Ice
  5. Salt (if you like it)
  1. Fill a cocktail shaker with ice
  2. Rim a margarita glass with lime juice and salt
  3. Pour the Patron, Cointreau and lime juice into the shaker and shake vigorously
  4. Strain into the margarita glass, garnish with a lime and/or orange wedge

Number of servings (yield): 1

Meal type: cocktail

Chicken Tortilla Soup

Enchiladas Verdes

: Tequila Lime Fajita Marinade
  1. 3 lb Flank steak (or chicken)
  2. 1/4 C Patron Silver
  3. 4 limes, juiced and zest
  4. 1 orange, juiced and zest
  5. 1 chipotle in adobo, chopped
  6. 1/4 C diced red onion
  1. Freeze the flank steak for about 30 minutes to make it easier to slice
  2. Place in a plastic baggie with the limes, orange, tequila, chipotle and onion.
  3. Marinate overnight
  4. Grill whole or slice frozen and lightly sautee
