My favorite Christmas tradition is decorating the Christmas tree.

Christmas Trees are just magical.

They twinkle and glow, they tell a story, they shelter our gifts, give home to cheeky elves and they lend a sense of magic to our homes.

Part of what makes these trees so magical is what we choose to decorate them with.

I don’t know how y’all do ornaments in your family, but in my family the Family Tree is just that – it’s not a Macy’s display – it’s Family Tree.

 

It’s a 6 1/2 foot tall bedecked, glowing, family history.

In my family, we are given an ornament every year of our life.  While I was growing up, my parents and my maternal Granny each gave me an ornament every single year. When Nathan and I got married – they included him in the tradition giving him one, and giving us a couples ornament, too.  Once the kids were born it was an ornament for me, an ornament for Nathan, a couples ornament and an ornament per kid; plus we gave each kid an ornament.  (If you’re doing the math – 2 ornaments per year up to age 22 = 44 ornaments. 4 ornaments per year after that.. oh wait then we had kids .. my brain hurts)

One of the reasons that I love this tradition so much is that every year when we decorate our tree it’s a walk down memory lane.  It’s family history lesson. More often than not tears come into my eyes as I run my fingers over 30+ year old papier mache and yellowing lace edged angels, as my kids shout out the year and try to guess who each ornament came from and how old I was when I got it.

Memories swarm me.  Sometimes overwhelming, always welcome and always a blessing.

Every ornament that I choose for my children tells a story of who we are that year, what they’ve accomplished, experienced or where we’ve been.  Every ornament is a tale waiting to be told, a memory ready to be unwrapped.

This year we’ve done a lot of stargazing.

While we camped on the beach, while we sat crying over losses and while we hoped for change. The stars have played a huge part of our lives this year.

My amazing friend, Lisa, created this Molded Star Ornament and gifted one to my family.  When I opened it, my breath caught. The handcrafted beauty, the weight of the metal, the soft velvet ribbon.

When we took this ornament out of its bag and hung it on our tree, Nathan and I both ran our fingers lightly over it – we exhaled and we remembered.

I cannot thank Lisa enough for this gift. Lisa’s timing is unbelievable, her gifts always seem to arrive on a day when we most need a blessing, a reminder.

Pumpkin Cake with Vanilla Bean Cream Cheese Frosting

Did y’all survive the Thanksgiving Feast? Are you still nomming away on leftovers?
I’m actually brining my *leftover* Turkey right now and we’ll be devouring my Poblano Turkey this week ;-)

This dessert was one of the highlights of our Thanksgiving table (well, this and the sock cake – more about that later)

I also took this to the school for the Staff Thanksgiving Luncheon and I think it was one of the first to disappear.
This cake is moist – and rich and delicious and when topped with the Vanilla Bean Cream Cheese Frosting – Oh. My. Holy. Tonguegasm, y’all!!!!

Pumpkin Cake with Cream Cheese Frosting

Prep Time: 20 minutes

Cook Time: 18 minutes

Approximate Time: 38 minutes

Serving Size: 1 sheet cake

Delicious and creamy vanilla cream cheese frosting, perfect for topping any spice cake or pumpkin cake. Cinnamon is a yummy addition for an extra hint of fall, if desired.

Ingredients

    Cake
  • 4 eggs
  • 1 C vegetable oil
  • 2 1/4 C white granulated sugar
  • 1 (16 oz) can of Pumpkin
  • 2 C all purpose flour (do not pack, spoon it into the measuring cups)
  • 2 rounded tsps. cinnamon (roasted if you have it)
  • 1 tsp baking soda
  • Dash - just a sprinkle - of nutmeg or cloves (whichever you prefer - I've done both)
  • Frosting
  • 1 8 oz block cream cheese - softened
  • 3/4 stick butter (5 Tbsp) - softened - not room temp
  • 2 Tbsp milk
  • 1 1/2 Tbsp vanilla extract (I use Vanilla Paste)
  • 2 1/2 C powdered Sugar (or more for consistency)

Instructions

    Cake
  1. Preheat oven to 350 F
  2. In a medium bowl: add flour, salt, cinnamon, nutmeg and baking soda
  3. In mixing bowl cream together: Eggs, Oil, and Sugar
  4. Add in the Pumpkin, mix well
  5. Add the dry ingredients to the wet and blend well
  6. Pour into a well greased 11X17" rimmed baking pan (aka sheet pan)
  7. Bake for 22 to 28 minutes, or until a dry spaghetti noodle comes out slightly crumby
  8. Let cool and then frost with Cream Cheese Frosting (I freeze it for about 30 minutes after frosted)
  9. Frosting - This is going to be a consistency thing so add and take away until it reaches your desired consistency.
  10. Beat Cream Cheese and Butter together until creamy.
  11. Add milk, vanilla and powdered sugar.
  12. Beat until smooth.
  13. Add more powdered sugar or vanilla to taste and consistency

Jalapeno Stuffed, Bacon Wrapped Brats

Y’all remember when I shared with y’all my Game Day Grilling Tips and then my recipe for Garlic Burgers with Caramelized Chipotle Onions?

Today, I have another delicious recipe for y’all – courtesy of my Game Day Grillin’ Party sponsored by Bush’s Beans

Jalapeno Stuffed, Bacon Wrapped Grilled Brats

These delicious brats were grilled to perfection and the addition of the crisp smoky bacon and the sizzling heat of the jalapenos – oh my goodness these were good!

The crisp smokiness and heat were delicious when paired with the slightly savory and sweet Bush’s Onion Baked Beans

Brown sugar, specially cured bacon and a delicate blend of spices are slow cooked with onions to create our Onion Baked Beans.

I took one 8 pack of traditional brats and cut 3 or 4 slits into each one, into each slit I stuffed a thin slice of fresh jalapeno

Then, I wrapped each one with a thick slice of hickory smoked bacon – inserted a presoaked wooden skewer to anchor the bacon and allow for easy placement onto and removal from the grill

We grilled the brats until the bacon was crisp and both the brats and the bacon began to develop a nicely blackened crust

These were absolutely delicious, gobbled up quickly and I may have seen more than one of the guys swirling their bratwurst in the bean sauce on their plates (but shhhhh you didn’t hear that from me!)

The next time that I make these brats, and there will be a next time, I’m going to drizzle them with mango chutney as soon as they come off the grill.  This will intensify the flavors and really highlight the smoke and heat.

Jalapeno Stuffed, Bacon Wrapped Brats

Prep Time: 10 minutes

Serving Size: 1 brat

Delicious bratwursts enhanced by jalapenos and bacon. I suggest drizzling them with mango chutney sauce immediately upon removing them from the grill.

Ingredients

  • Package of Traditional Bratwursts (pre-cooked works best)
  • 1 package thick bacon
  • 2 jalapenos
  • package of skewers, I prefer wood

Instructions

  1. 30 minutes before you are going to cook the brats, soak the skewers in a water bath
  2. Thinly slice your jalapenos, remove the seeds - if necessary
  3. Cut a few slits into each bratwurst and into each slit insert a slice of jalapeno
  4. Wrap the brats in bacon, slide the skewer through the bratwurst anchoring the bacon
  5. Grill over indirect heat to ensure that they're heated all the way through then crisp the bacon and brats over direct heat for that gorgeous, delicious, crispy char that makes these a feast for the eyes as well as the mouth.
  6. The bratwurst should reach a core temperature of 160F as read by a meat thermometer
