Family Tradition

Every year, Nathan and I put the kids in the car, grab a pizza and drinks, put on Christmas music and drive around looking at Christmas lights for hours.  We’ve done this since Princess was 1 year old – it’s something we all look forward to.  It’s as much a part of our Christmas as decorating the tree, Elf on The Shelf, Baking, Tamales, Chili and Country Ham.

PepperJack Corn Chowder

Pepperjack, Cilantro, Green Chilies, Tomatoes, Lime Juice and sweet corn. pepperjack corn chowder

On the day that I was deciding what to make for this month’s VELVEETA® and Ro*Tel® recipe, a crazy cold front blew in to South Texas.  It dropped 15 degrees in an hour and we actually had to put on {gasp} long sleeves!

That solidified it, it was time for something hearty, filling and easy.   I went to my pantry and found that I had a can of Mexican Style Ro*Tel® with Cilantro and Lime Juice and a couple of cans of cream style corn.  Done.  No brainer.  I decided to do a twist on a Southern Classic – Corn Chowder.  I sauteed sweet red bell peppers, green bell peppers and yellow onion in butter until slightly soft

Then I added in cream cheese, cream style corn, milk, pepperjack VELVEETA® and Mexican Style Ro*Tel® with Cilantro and lime juice and simmered and stirred until everything was melted and creamy.  Poured everyone a bowl and we devoured it.  Nathan, who doesn’t eat corn unless it is grilled corn on the cob – asked for seconds.  My kids (I fainted) loved it.  This was quick, delicious, filling, satisfying and yummy… did I mention that it was delicious?  I’m so excited to share this yummy meal with y’all and I hope that y’all, in turn, share it with your friends and family!

Pepperjack Corn Chowder

Prep Time: 15 minutes

Cook Time: 35 minutes

Approximate Time: 50 minutes

Pepperjack cheese, cilantro, lime juice, tomatoes, green chilies - a delicious, creamy, warm and filling chowder. Perfect for cold weather.

Ingredients

  • 3 Tbsp butter
  • 1/2 red bell pepper, chopped (about 1/2 C)
  • 1/2 green bell pepper, chopped (about 1/2 C)
  • 1/2 small yellow onion, chopped (about 1/2 C)
  • 4 oz. Cream cheese, cubed
  • 8 oz. VELVEETA® pepperjack
  • 1 1/2 (14.5 oz) cans cream style corn (2 cans if you like chunky chowder)
  • 1 (14.5 oz) can Mexican Style Ro*Tel® with Cilantro and Lime Juice, drained of 3/4 of the juice
  • 1 C milk
  • salt and pepper to taste

Instructions

  1. In a large saucepan over medium heat, melt butter and add in bell peppers and onions. Saute' until softened.
  2. Add in cream cheese and cook, stirring frequently, until melted.
  3. Add in VELVEETA® pepperjack, cream style corn, Mexican Style Ro*Tel® with Cilantro and Lime Juice and milk. Cook until melted and the chowder is hot, stirring frequently.
