<p>Hey there. I&#8217;m Karly and I have buns in my oven. At least, that&#8217;s what I like to say and then people drop their gaze down to my belly and I say &#8220;Oh no, I mean actual buns. In my oven. We aren&#8217;t talking about babies here.&#8221; I like confusing people. It&#8217;s fun and you should try it sometime! Anyway, I blog at <a href="http://www.bunsinmyoven.com" >Buns In My Oven</a>, mostly about butter, chocolate, bacon, and cheese. Those four things are sort of my best friends. <p>I love Miss Rachel, so of course there was no way I could turn her down when she asked me to participate in this Holiday Bake Along! Have you ever met Rachel? I have and let me tell you, she&#8217;s just as sweet as you&#8217;d imagine her to be. Great smile, pretty face, and so cute you kind of want to eat her face off. Love you, Rachel! <p>I usually make and share cinnamon rolls for Christmas. They&#8217;re super easy to just pop in foil pans, freeze, and share with friends and family. This year, I&#8217;m kicking it up a notch. These Sticky Sticky Buns are outrageous. The dough is this super rich and tender brioche (don&#8217;t freak out, it&#8217;s easy to make!) that is filled with cinnamon, sugar, and pecans, but the real magic happens when you bake it in a big dish full of caramel and pecans.</p>

<p>So, what I&#8217;m saying is this: You love someone. You want to make them a holiday gift to show that love. You should make them these Sticky Sticky Buns.</p>

<div><strong>Sticky Sticky Buns<br />
</strong><em>recipe from <a rel="nofollow" href="http://www.amazon.com/Flour-Spectacular-Recipes-Bostons-Bakery/dp/081186944X/ref=sr_1_1?ie=UTF8&amp;qid=1304094637&amp;sr=8-1"  target="_blank">Flour Bakery</a></em></div>
<div><em>For the brioche dough:</em></div>
<ul>
<li><strong>2 1/4 cups unbleached all-purpose flour</strong></li>
<li><strong>2 1/4 cups bread flour</strong></li>
<li><strong>1 1/2 packages (3 1/4 teaspoons) active dry yeast</strong></li>
<li><strong>1/2 cup plus 1 tablespoon sugar</strong></li>
<li><strong>1 tablespoon kosher salt</strong></li>
<li><strong>1/2 cup cold water</strong></li>
<li><strong>5 eggs</strong></li>
<li><strong>1 cup plus 6 tablespoons (2 3/4 sticks) unsalted butter (I used salted), cut into 10 or 12 pieces, room temperature</strong></li>
</ul>
<p><strong>In a stand mixer fitted with the dough hook, combine everything but the butter. Beat on low speed for 3 or 4 minutes, or until everything has come together. Stop the mixer as needed to scrape the sides and bottom of the bowl to be sure that all of the flour is incorporated. </strong></p>
<p><strong>Once the dough comes together, continue mixing on low for another 3 or 4 minutes. The dough will be very stiff and dry.</strong></p>
<p><strong>On low speed, dd the butter one piece at a time. Mix well after each addition until it disappears into the dough. Continue mixing the dough on low speed for 10 minutes, stopping occasionally to scrape down the bowl. It is important that all the butter is mixed thoroughly into the dough. You may need to stop the mixer and use your hands to help mix in the butter.</strong></p>
<p><strong>Once the butter is completely incorporated turn up the speed to medium and beat for another 15 minutes or until the dough becomes sticky, soft, and shiny. It will look shaggy at first, but it does eventually turn smooth and silky. Turn the speed to medium-high and beat for one minute.</strong></p>
<p><strong>Test the dough by pulling at it. It should stretch a bit and have a little give. If it seems wet and loose or more like a batter than a dough, add a few tablespoons of flour and mix until it comes together. If it breaks off into pieces when you pull at it, continue to mix on medium speed for another couple of minutes or until it develops more strength. It is ready when you can gather it all together and pick it up in one piece.</strong></p>
<p><strong>Place the dough in an oiled bowl and cover it with plastic wrap, pressing the wrap directly onto the dough. Let proof in the refrigerator for 6 hours or overnight. At this point you can freeze the dough for up to 1 week.</strong></p>
<p><strong><em>For the goo:</em></strong></p>
<ul>
<li><strong>3/4 cup (1 1/2 sticks) unsalted butter</strong></li>
<li><strong>1 1/2 cups packed brown sugar</strong></li>
<li><strong>1/3 cup honey</strong></li>
<li><strong>1/3 cup heavy cream</strong></li>
<li><strong>1/3 cup water</strong></li>
<li><strong>1/4 teaspoon kosher salt</strong></li>
</ul>
<p><strong>In a medium saucepan, melt the butter over medium heat. Whisk in the brown sugar until it dissolves. Remove from heat and whisk in the honey, cream, water, and salt. Let cool for 30 minutes or until room temperature. You should have about 2 cups of goo.</strong></p>
<p><strong><em>For assembling the Sticky Sticky Buns:</em></strong></p>
<ul>
<li><strong>Brioche dough</strong></li>
<li><strong>1/4 cup packed brown sugar</strong></li>
<li><strong>1/4 cup granulated sugar</strong></li>
<li><strong>1/2 teaspoon ground cinnamon</strong></li>
<li><strong>1 cup pecan pieces, toasted</strong></li>
</ul>
<p><strong>Remove the dough from the refrigerator and roll out on a floured work surface. (Don’t skimp on the flour.) Roll into a rectangle about 16×12 inches and 1/4 inch thick. The dough will have the consistency of cold play-doh and should be pretty easy to work with.Position the dough so that the short end is facing you.</strong></p>
<p><strong>In a small bowl, stir together the sugars and cinnamon. Sprinkle this evenly over the entire surface of the dough. Sprinkle 1/2 of the pecans evenly over the dough as well.</strong></p>
<p><strong>Starting at the short end furthest from you, roll up the rectangle like a jelly roll. Roll tightly. Even off the ends by trimming about 1/4 inch from both sides.</strong></p>
<p><strong>Use a bench scraper or chef’s knife to cut the roll into 8 equal pieces, each about 1 1/2 inches wide.</strong></p>
<p><strong>Pour the goo into a 9×13 baking dish, covering the bottom evenly. </strong></p>
<p><strong>Sprinkle the remaining pecans evenly over the goo. Place the buns in the baking dish leaving a bit of space between each one. Cover the dish with plastic wrap and place in a warm spot to proof for 2 hours. The dough should be puffy, pillowy, and soft and the buns should be touching at the end of the 2 hours.</strong></p>
<p><strong>Preheat oven to 350 degrees and bake the buns for 35 to 45 minutes or until golden brown. Let cool in the dish on a wire rack for 20 minutes. One at a time, invert the buns onto a serving platter and spoon the good from the bottom of the dish on top.</strong></p>
<p><strong>Serve warm. Store in an air tight container for up to 1 day, if needed. The buns can be rewarmed in a 325 degree oven for 5-10 minutes before serving.</strong></p>

<p>Hello everyone!  I&#8217;m Kierste, the girl from <a href="http://www.brownpaper--packages.com/" ><span style="font-size: large;">{brown paper packages}</span></a>, and I am delighted to be a part of this fabulous series!  One of my favorite combinations is chocolate and peppermint, and this recipe is an absolutely delicious way to enjoy it.  The presentation is absolutely beautiful, and it&#8217;s perfect for any holiday party&#8211;and showing off your baking skills!The richness of the chocolate cake is perfectly paired with the light creaminess of the peppermint filling, and who can resist a delicious chocolate glaze?  If you&#8217;re short on time, consider serving them as brownies instead&#8211;frost the cake with the filling, then spread the glaze on top.  (You might want to double the glaze.)</p>

Gradually add remaining 1/3 cup sugar; continue beating 2 additional minutes.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Stir together flour, cocoa, baking powder, baking soda and salt; on low speed, add to egg yolk mixture alternately with water, beating just until batter is smooth. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Using rubber spatula, gradually fold chocolate mixture into beaten egg whites until well blended. Spread batter evenly in prepared pan.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Bake 12 to 15 minutes or until top springs back when touched lightly. Immediately loosen cake from edges of pan; invert on clean towel sprinkled with powdered sugar. Carefully peel off foil. Immediately roll cake in towel, starting from narrow end; place on wire rack to cool completely.</li><div id="zlrecipe-instruction-8" class="instruction-label" >Prepare PEPPERMINT FILLING. </div><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Beat cold whipping cream in medium bowl until slightly thickened.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Add 1/4 cup powdered sugar and 1/4 cup finely crushed hard peppermint candy or 1/2 teaspoon mint extract and a few drops red food color, if desired; beat until stiff.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Carefully unroll cake; remove towel. Spread cake with filling; re-roll cake. </li><div id="zlrecipe-instruction-12" class="instruction-label" >CHOCOLATE GLAZE.</div><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Melt butter in small saucepan over very low heat; add cocoa and water, stirring until smooth and slightly thickened. Do not boil. </li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Remove from heat; cool slightly. (Cool completely for thicker, frosting-type topping) </li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Gradually add powdered sugar and vanilla, beating until smooth. Makes about  3/4 cup glaze. </li><li id="zlrecipe-instruction-16" class="instruction" itemprop="recipeInstructions">Glaze Cake and refrigerate until just before serving. <p>I love my Grandma&#8217;s caramel recipe,<br />
because it really easy and they turn out perfectly every time.<br />
My one piece of advice -<br />
Buy a candy thermometer.<br />
It just makes the process go a little bit smoother.</p>
<p>Let&#8217;s get started!</p>
<p>You&#8217;ll need:<br />
2 c. sugar<br />
1 1/2 cups dark corn syrup<br />
2 cubes butter = 2 sticks (1 cube = 1/2 C)<br />
1 pint half &amp; half</p>
<p>Combine all the above and cook over medium heat<br />
stirring constantly (and I mean constantly) &#8211; to a hard ball state.</p>
<p>Add vanilla.<br />
My Grandma doesn&#8217;t give a measurement.<br />
I add a couple of teaspoons.<br />
You can add nuts.<br />
I don&#8217;t.<br />
Why ruin something so delicious?</p>
<p>Now pour into a BUTTERED 9&#215;13 pan.<br />
Let cool.<br />
Cut &amp; wrap piece in waxed paper.</p>

<p>Hi Southern Fairytale readers!! I&#8217;m Kristan from<strong> <a href="http://www.confessionsofacookbookqueen.com/" >Confessions of a Cookbook Queen </a></strong>and I&#8217;m so excited to be here sharing a fun Christmas cupcake with you today. Christmas and cupcakes are two of my most favorite things in all the land, so combining the two is like magic with sugar on top.</p>
<p>&nbsp;</p>
<p>Also, I don&#8217;t know if you can tell by looking at him, but Santa likes stuff with butter and sugar in it. Like&#8230;a lot. So&#8230;.there&#8217;s a good chance that making these will seal the deal on those $300 boots on your Christmas list.</p>
<p>&nbsp;</p>
<p>(Yes, $300 boots are a perfectly normal thing to ask for. Or a life size cut out of Gerard Butler. Whatevs)</p>
<p>&nbsp;</p>

<p>These cupcakes are so cute and impressive looking, but are actually very, very easy to put together.</p>
<p>&nbsp;</p>
<p><span style="text-decoration: underline;">You&#8217;ll need</span>:</p>
<p>&nbsp;</p>
<p><strong>Cupcakes, obviously</strong>. Baked in festive liners (I used red foil liners) and frosted with a big ol&#8217; pile of frosting. You can use canned frosting, or make your own. I have a <strong><a href="http://www.confessionsofacookbookqueen.com/2010/07/buttercream-101/" >Buttercream tutorial</a></strong> on my site, if you need a good recipe. I sprinkled mine with white sugar sprinkles too, to give them that snowy look.</p>
<p>&nbsp;</p>

<p><strong>Graham crackers</strong>. One little rectangle (fourth of a sheet) per cupcake. Cinnamon sugar graham crackers were all I had at home, and that&#8217;s just fine. You cover them anyways.</p>
<p>&nbsp;</p>
<p><strong>Fondant</strong>. I know some people make their own, but for a project this small, it&#8217;s probably easier to buy it at your local craft store or Walmart. Spread the flat side of each graham cracker with a thin coat of frosting, and cover with a rectangle of fondant.</p>

<p><strong>Peppermint sticks and red gumballs</strong>. Again, one per cupcake. I bought the gumballs at Michaels craft store (they sell bags of individual colors) and you can buy bags of Bob&#8217;s Soft Peppermint sticks at Walmart for $1.00 around Christmas time.</p>
<p>&nbsp;</p>

<p><strong>White almond bark or candy melts</strong>. Melt your almond bark or candy melts (you won&#8217;t need much, so just melt a little) and attach a gumball to the top of each peppermint stick. Spread a bit of melted candy on the uncovered side of your graham cracker rectangles and attach to the sticks, near the top. Allow to set until the melted candy is firm.</p>
<p>&nbsp;</p>
<p><strong>Black frosting or a black food marker</strong>. Using a piping bag fitted with a small round tip (I used #2) OR a black food marker, write North Pole on each sign. I also colored some frosting red and piped a border around the edges of the sign. You can do this too, or even make a border from small candies or sprinkles.</p>
<p>&nbsp;</p>
<p>Insert the poles in the cupcakes.</p>

<p>I found these at Michaels also, right by the cash register. They are paper thin and entirely edible. SO cool!! Once my cupcakes were finished, I placed a few here and there on the frosting. But if you can&#8217;t find these, any snowflake sprinkles would work, or just leave off the snowflakes all together.</p>
<p>&nbsp;</p>
<p>Keep in mind that these cupcakes are very flexible. You could use regular candy canes for the poles or substitute red M&amp;Ms for the gumballs. Santa will still love them, I promise.</p>

<div class="separator" style="clear: both; text-align: center;">This recipe for <span style="font-size: large;">turtle bars</span> is one I got from my mother in law and from the first time I tried them I was love. Carmel + pecans + chocolate = heaven in a 9X13 pan. No. Really. It&#8217;s true.:)</div>
<div class="separator" style="clear: both; text-align: center;">These simple and delicious squares are the perfect holiday treat and definately need to be shared, so come  follow along as we make some delicious turtle bars and then package them up to give this holiday season.</div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-size: large;">Ingredients you&#8217;re going to need:</span></div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-size: large;">crust:</span></div>
<div style="text-align: center;">2 cups flour + 1 cup brown sugar + 3/4 butter softened</div>
<div style="text-align: center;"><span style="font-size: large;">carmel: </span></div>
<div style="text-align: center;">1 cup butter + 1 ½ cups brown sugar + 3 tbsp corn syrup</div>
<div style="text-align: center;"><span style="font-size: large;">plus:</span></div>
<div style="text-align: center;">2 cups of chopped pecans + 2 cups of milk chocolate chips</div>

<div class="separator" style="clear: both; text-align: center;">You&#8217;ll begin by buttering a 9X13 inch pan. These squares tend to stick so butter it up good. Now we&#8217;re going to mix up the crust. Grab 3/4 cups of softened butter, 1 cup of brown sugar and 2 cups of flour and mix well. Pour the mixture into your 9X13 pan and press down evenly to form the crust.</div>

<div style="text-align: center;">Next take 2 cups of chopped pecans and sprinkle over the top of the crust and press them in a bit. Set aside. In a saucepan we can start preparing the carmel. Bring1 cup of butter, 1/2 cup of brown sugar and 3 tbsp corn syrup to a boil and boil for one minute. Pour over the crust + pecans in the 9X13 pan.</div>
<div style="text-align: center;">Bake at 350 degrees for 20 minutes. Take out of the oven and sprinkle 2 cups of milk chocolate chips over the top. Let sit about 5 minutes and then spread softened chips to cover. Allow ample cooling time before you enjoy!</div>

<div class="separator" style="clear: both; text-align: center;">Pretty simple and believe me when I tell you, they are so yummy!</div>
<div class="separator" style="clear: both; text-align: center;">To share some of these yummy treats you can package them up in a small jar with some simple trimmings. Using a brown paper bag I cut out a circle big enough to cover my jar lid and hang over the sides a little bit. I centered the circle on the jar lid, folded it down and began folding pleats all around the edge. Tie with a small scrap of lace or ribbon and attach a tag to the top of your jar and all done.</div>

Grab 3/4 cups of softened butter, 1 cup of brown sugar and 2 cups of flour and mix well. Pour the mixture into your 9X13 pan and press down evenly to form the crust.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Next take 2 cups of chopped pecans and sprinkle over the top of the crust and press them in a bit. Set aside. In a saucepan we can start preparing the carmel. Bring1 cup of butter, 1/2 cup of brown sugar and 3 tbsp corn syrup to a boil and boil for one minute. Pour over the crust + pecans in the 9X13 pan.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Bake at 350 degrees for 20 minutes. Take out of the oven and sprinkle 2 cups of milk chocolate chips over the top. Let sit about 5 minutes and then spread softened chips to cover. Place chopped pecans in a microwave dish with 3 Tablespoons butter. Cook for 8 &#8211; 10 minutes, stirring twice. Add the ‘wet’ mixture to flour mixture, stirring just until moist.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Fold in the pureed sweet potato.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Spray a skillet with cooking spray and heat the skillet over medium heat. Pour 1/4 cup amounts in the pan and cook until you see bubbles start appearing. Flip the pancake.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Cook the pancakes a minute or so longer, set aside and repeat. Top with some fruit and a bit of real maple syrup.</li><div id="zlrecipe-instruction-6" class="instruction-label" >Sweet Potato Note:</div><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">I pierced a washed and dried sweet potato several times with a fork and placed the potato on a plate. I microwaved it for 5 minutes, flipped the potato over and microwaved an additional 4 minutes. The potato was soft and when squeezed, could easily be mashed.</li><div id="zlrecipe-instruction-8" class="instruction-label" >For The Labels: Sweet Potato Gingerbread Pancakes - In a bowl combine: 2 lg eggs, lightly beaten, 1 c milk, 1 Tbsp. canola oil, 1 tsp. vanilla extract, 1 sweet potato, cooked, peeled and pureed*. Stir just until moistened. Bake in a heated skillet. holiday cookie recipes! I realize I’m probably in the minority here but one of my favorite ice creams in the<br />
world is rum raisin . . . and when <a href="http://www.marthastewart.com/356093/rum-raisin-shortbread-cookies">Martha Stewart rolled out (pun intended) her Cookie App for the iPad, I<br />
was thrilled to find a recipe for this Rum-Raisin Shortbread cookie – it is a wowzer!</a></p>

fine because it means more cookies for moi . . .</p>
<p style="text-align: left;">I also happen to think these little gems are perfect for holiday gift-giving, cookie swaps, host/hostess gifts<br />
or any time you simply want to say &#8216;thank you.&#8217; And the best part is that once your currents are soaked<br />
in rum overnight, the dough comes together in less than 10 minutes, is rolled into logs, refrigerated for<br />
an hour (or up to three days) and then you simply slice and bake . . . easy-peasy! But please use currants<br />
instead of raisins – these cookies are smaller and currants just plain work better here.</p>
