Mushroom Quesadillas

I love, love, love quesadillas and I adore mushrooms.  So, when a friend at The Mushroom Channel sent me the link to this research done by City of Hope about the possibility of Mushrooms having cancer fighting properties, I knew that I had to link to it and post one of my quickest and easiest and NUMMIEST mushroom recipes. (Go read the research, it’s really interesting!)

Mushroom Quesadillas

(makes 2 quesadillas  = 8 triangles)

  • 5 mushrooms,  chopped
  • 1/4 red bell pepper, chopped
  • 1/4 small yellow onion, chopped
  • (refried black beans are awesome on here, too)
  • your favorite cheese (I use 4 cheese Mexican Blend)
  • 4 Multi-Grain or Whole Wheat Tortillas

1. Chop all your vegetables and set them aside

2. Heat up your skillet or flat top grill

3. place 2 of your tortillas on your hot grill, sprinkle with a little cheese (or the refried beans) and then add your veggies, top with cheese

4.  Put the other tortilla on top, gently press down and then cook for about 3 to 5 minutes on each side, depending upon the heat of your grill and how crispy you like your quesadillas!

5.  Remove from heat, let sit for a few minutes to cool and then cut, I use a pizza cutter to slice mine into triangles.

Serve with Sour Cream, Salsa or just eat plain.

These are filling, delicious and have the most amazing sweet, juicy, tangy bite from the combination of the meaty mushrooms, the fresh bell pepper and the crisp bite of the onion.  If you have refried black beans on hand, I highly recommend adding them to this.

Mouthwatering Quiche Recipe

Today’s Mouthwatering Monday post is an easy faux fancy dish. It sounds fancy, just say it: “Quiche Lorraine”, do you hear the ooohs and aaahhhs from your friends and family? They will be impressed and they will devour it, trust me. My husband looked at my mom like she was serving him melted plastic when she served him quiche for the first time, and then he ate 3/4 of the dang thing. This recipe changes a bit every time that I make it, there are all different additions and variations you can use, but this is my favorite.

  • quiche lorraine
  • Plain pastry, 9″ shell
  • 8 bacon slices,  diced
  • ½ C chopped green onions, tops to bottoms = about 1 bunch
  • 6 eggs, beaten
  • ½ tsp onion pepper
  • ½ tsp garlic salt
  • 1 ¼ C fresh shredded swiss cheese
  • 1 C sliced mushrooms
  • 2 C light cream (half and half)
  • 3 shakes pepper, to taste
  1. Line the 9 inch pie pan with pastry, trim the edges and crimp, flute or fork the edges for a decorative presentation.
  2. Brown bacon lightly; drain off excess fat (don’t I wish I could do that with me) Add green onions and mushrooms and cook until bacon is golden brown and the onions and mushrooms have softened, slightly
  3. Remove from heat and cool slightly.
  4. Combine eggs, cheese, onion powder, garlic salt and pepper. Add light cream and blend well.
  5. Add in bacon mixture and mix thoroughly.
  6. Pour into pie shell. (use a soup ladle if necessary to get all of the filling into the shell)

Delicious Spinach and Artichoke Dip

Spinach Artichoke dip is one of my favorite dips and with the Super Bowl coming up this weekend, I thought I’d share my recipe with y’all. It’s easy and absolutely tonguegasmic, if you serve this, you’ll definitely be your party’s MVP.

Delicious Spinach and Artichoke Dip

Prep Time: 20 minutes

Approximate Time: 20 minutes

Delicious Spinach and Artichoke Dip

Ingredients

  • 1 C chopped Artichoke Hearts (I use canned)
  • 1/2 C chopped frozen spinach, thawed
  • 8 oz cream cheese
  • 1/2 C fresh grated parmesan cheese
  • 1 tsp red pepper flakes
  • 4 garlic cloves, minced or pressed (or more if you’re a super garlic lover)
  • salt and pepper, to taste

Instructions

  1. Cover the spinach and artichoke hearts with just enough water to cover, boil over medium heat until tender. (roughly, 10 minutes) Drain when done.
  2. In a saucepan over medium heat, saute the garlic in just a hint of olive oil, when the garlic becomes a bit translucent and yummy smelling, add the cream cheese and heat until it’s hot.
  3. Add the spinach artichoke mixture and the spices, mix well.
