Garlic Parmesan Pretzel Rods

When my parents came to visit last weekend they brought me a new cookbook; cookbooks are one of my favorite things ever.  I have a bit of a collection, I should show y’all pictures of it sometime…

While I was skimming through the cookbook I came upon a Parmesan Pretzel Rod recipe and knew I had to try it.

Garlic, Parmesan, Cayenne, Oregano, Butter and Olive Oil combined with crispy salty pretzel rods… yes, please!

I would shake more of the excess coating before baking next time, they’re still amazingly good but, the coating is a bit heavy as seen in this picture ;-)

Garlic Parmesan Pretzel Rods

Yield: 25 to 30 individual Pretzel Rods

Wrap these delicious treats in tissue paper or place in a cute jar wrapped with fabric or ribbon for a pretty back to school treat for teachers or office staff.

Ingredients

  • 1 C grated Parmesan/Asiago Cheese Mix (yes, the stuff in the shaker)
  • 1 tsp garlic powder
  • 1 tsp dried Mexican Oregano
  • 1/2 tsp cayenne pepper (or 1/4 tsp for the sensitive palate)
  • 6 Tbsp butter, sliced for easier melting
  • 1/4 C olive oil
  • roughly 25 to 30 pretzel rods

Instructions

  1. In a small bowl, combine cheese, garlic, oregano and cayenne
  2. Put olive oil and butter in a small saucepan, heat until the butter is melted
  3. Coat 1/2 to 3/4 of the pretzel rod with the butter/oil mixture; roll the pretzel rods in the cheese mixture and gently tap to shake the excess cheese from the pretzel.
  4. Put the pretzel rods on an un-greased baking sheet, bake at 275 F for 10 minutes, turn each pretzel rod halfway and then bake an additional 10 to 15 minutes or until golden brown.
  5. Allow to cool and store in a closed container.

Zucchini, Garlic and Mushroom Pasta

Let’s talk pasta, quick and easy and flavor rich pasta packed with zucchini, garlic, red bell peppers, mushrooms and sprinkled with fresh grated parmesan cheese. In a word; this pasta is tonguegasmic.

Zucchini, Garlic and Mushroom Pasta

inspired by and adapted from Lori’s Mom’s Recipe

  • 4 Smallish to Medium zucchini, shredded
  • 1 Head Garlic, minced
  • 10 oz mushrooms, sliced
  • 1 red bell pepper, sliced or chopped
  • 14.5 oz box Barilla Pasta Plus Thin Spaghetti
  • Parmesan Cheese
  • 1 Tbsp Crushed Red Pepper ( start with 1/2 and go up)

Let’s Get Started

  1. Chop or slice your red bell pepper

2.  Grate your zucchini (or use your food processor that you probably should have figured out how to work by now *ahem*)

3.  Mince your garlic and slice your mushrooms

I don’t have a picture of this step because I couldn’t get the lighting to work and the pictures were really bad

4.  Start your pasta water

5.  In a medium skillet over medium heat saute your garlic and mushrooms and peppers in olive oil for about 2 minutes, add in the zucchini and crushed red peppers.  Cook, stirring frequently for about 12 to 15 minutes.

5.  While the veggies are cooking, add your pasta to your pasta water and cook according to box directions.

6.  Drain the pasta, Drain the veggies and toss them all together.

7.  Top with fresh grated parmesan and serve to the delight of your friends and family.

Cumin Garlic Chicken with Tomatillo Sauce and Chipotle Rice

Tonguegasmic is truly the only word that describe this dish. Spicy, smoky, savory, fresh, aromatic, flavorful, bursting… I could go on and on. I had another dish set to share for today’s Mouthwatering Monday post and then I made this and since I had to restrain myself from Scooby Doo licking of my plate, this dish.. trumped the other.

    Cumin Garlic Chicken with Tomatillo Sauce and Chipotle Rice

  • 1/4 C olive oil (divided)
  • 1 1/2 tsp ground cumin
  • 1/2 tsp freshly ground black pepper
  • 5 garlic cloves, finely chopped
  • 4 boneless skinless chicken breasts
  • 1/2 pound tomatillos
  • 1/2 C fat free chicken broth
  • 1/4 C cilantro leaves (just remove the stems and don’t pack them in)
  • Juice of two limes (roughly 3 Tbsp)
  • 1/2 tsp sugar
  • Dash salt
  • 3 garlic cloves, chopped
  • 1/4 C chopped onion
  • 1 jalapeno pepper (seeded if you can’t handle the heat), chopped
  1. Combine olive oil, cumin, black pepper and garlic cloves with the chicken in a large plastic baggie. Massage the baggie to make sure that the seasonings cover the chicken. Marinate for 30 minutes or more.
  2. Remove the husks and stems from the tomatillos and combine them with 1/2 C chicken broth in a small saucepan over medium-high heat. Cover and cook for 9 minutes. Drain and leave the tomatillos to cool slightly.
  3. Combine the tomatillos, cilantro, green onions, 2 Tbsp lime juice, sugar, salt, garlic and jalapenos. Place them in a food processor (or, if like me you don’t have a food processor, place them in a blender) and process until smooth.
  4. Remove the chicken from the bag and place in a skillet over medium high heat. Cook about 9 minutes per side or until cooked through (this will vary depending upon thickness)
  5. * start making the rice when you place the chicken in the pan

Chipotle Rice

  • 1 C long grain rice
  • 2 C fat free broth (chicken or vegetable)
  • 1/2 C chopped green onions
  • 1 Tbsp sour cream
  • 2 chipotles in adobo sauce, chopped plus 1 tsp sauce
  • 1/4 C chopped onion
  • 1 Tbsp butter (or olive oil)
  1. Add butter (olive oil) in a skillet over medium high heat and when it has browned, add onion, garlic and uncooked rice. Stir until fragrant and caramelization just begins. Remove from heat and add with chicken broth in a sauce pan. Bring to a boil and then cover and simmer for 15 minutes.
  2. Remove cover and add green onions, a squeeze of lime juice and chipotles and adobo sauce. Stir and simmer another minute or two.
  3. Remove from heat, stir in sour cream and keep covered until ready to serve.

Spoon the rice onto a plate, top with the chicken and then generously cover with the tomatillo sauce.
