Valentine’s Day Breakfast Recipes

Okay, Valentine’s day is this weekend and while I’m over here whipping up Cupid cupcakes and Vanilla Glazed Heart Shaped Cookies for a kinder party today, I thought I’d share two of my favorite super easy and DELICIOUS breakfast ideas that are perfect for Valentine’s Day.

Now, I want y’all to keep in mind that these are two of my first video recipes EVER so, just look past that and enjoy the recipes and mine and my kids’ silliness.

First Up:  Eggs in a Basket ~ Valentine’s Style

These are super easy.

  • Texas Toast (or thick cut white or wheat bread)
  • Eggs
  • salt and pepper
  • butter
  1. Butter the bread using a heart shaped cookie cutter, cut a heart into the center of your bread.  Put in a skillet over medium heat until you can hear the butter start to sizzle.
  2. Crack your egg into the heart and let it begin to set; I prefer my yolks scrambled, so scramble it and then add your seasonings to taste.
  3. When the egg is set, flip and brown the other side.

Serve with fresh fruit and a mimosa for the adults and orange juice and sparkling cider for the kids (adding raspberries to these drinks is a delicious and fun twist!)

Next: French Toast Apple Bake

(This is prepared the night before)

  • 3/4 C butter, melted
  • 1 C brown sugar
  • 1 tsp cinnamon (more, if your palate pleases)
  • 2 (21 oz) cans apple pie filling
  • 15 to 18 slices white bread
  • 8 eggs
  • 1 3/4 to 2 C milk
  • 1 1/2 tsp vanilla extract
  • Syrup (for later)
  1. Grease/Pam/Butter a 9X13 baking dish
  2. Pour butter into the dish and then sprinkle brown sugar and cinnamon into the dish.
  3. Top with the apple pie filling.
  4. In a mixing bowl whisk together eggs, milk and vanilla
  5. Layer the bread slices on top of the apple pie filling, pressing down firmly so that they get all nice and smooshed down onto the apple pie/butter mixture. You can alternate layers of bread with pouring the egg mixture so that every layer is thoroughly saturated.
    Make sure that you pour SLOWLY, so as to avoid spillovers ;-)
  6. Cover with aluminum foil and refrigerate overnight.
  7. Uncover and bake at 350 for 1 hour.
  8. Drizzle with syrup and put in the broiler for a few minutes to caramelize.

Candy Cane Kiss Cookies

Candy Cane Kiss Cookies.

Buttery Sugar Cookies, rolled in colored sugars and topped with a candy cane kiss as they come piping hot out of the oven.

Y’all, these cookies are dynamic.  They are beautiful to look at, delicious to taste and crazy simple to make.

These are going in darling snowflake covered boxes to my mom’s 3 best friends and their neighbors who are so graciously allowing my children to entertain their children while we visit.

Ignore the powdered sugar.

Candy Cane Kiss Cookies

  • 1 bag candy cane kisses, unwrapped
  • 1 Cup granulated sugar
  • 1 stick butter, softened (please don’t use margarine.. use butter, it makes it better)
  • 1 egg
  • 1 1/2 tsp vanilla extract (do not use imitation, please)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp milk
  • 2 C all purpose flour

Blend together; butter and sugar.  Add in egg and vanilla until well mixed.

In a medium bowl, mix together: flour, baking soda and salt.

Alternate adding the flour mixture and milk to the butter/sugar/vanilla/egg mixture.

Chill the dough for about 20 or 30 minutes (especially *ahem-cough-ahem*, you live in a humid climate)  then roll into 1″ balls and place on a cookie sheet.  Then, roll around in your pretty colored sugars. (do this one color at a time.. just sayin’)

Place in your pre-heated 350 F. oven and bake for about 8 minutes. (they will not look done)

As soon as you take them out, take your pretty bowl of gorgeous, candy cane striped kisses

and place one in the center of each cookie

Let cool for about 3 minutes on the cookie sheet and then carefully place them on a cooling rack to finish cooling.  The kisses are fragile and soft at this stage.

You will not believe how delicious these cookies are.  People will beg you for the recipe.

I made both red and green cookies but the green with the candy cane kiss are just sooooo gorgeous ;-)

Oreo Truffles

Just the word truffle is enough to turn many people away, but I promise you, this Oreo Truffle recipe is so simple and delicious that you’re going to find yourself creating reasons to make these Oreo Truffles.  Really, how can you go wrong with Oreos, cream cheese and chocolate?

*Update – 12/21/2011 – I’ve now been making these for 3 Christmases in a row and these are a constant request.  Everyone loves them and they’re so much fun to make with the kids or by myself ;-)   I’m updating pictures on old posts, so I removed most of the old ones and put this into a printable format.  Hope y’all enjoy!  Merry Christmas, y’all!!!

Oreo Truffles

Oreo Truffles

A wonderful holiday treat - these oreo truffles are simple, delicious and sure to put you on everyone's nice list

Ingredients

  • 1 packages oreo cookies
  • 1(8 oz) block cream cheese, softened
  • 1 packages semi-sweet chocolate (8 blocks in each package - or whatever you prefer to melt, I've also used bags of chocolate chips)
  • Toppings: crushed candy, toasted coconut, white chocolate, andes mint chips, more crushed oreos

Instructions

  1. Using a food processor or plastic bag and a rolling pin - turn the oreos from the package into crumbs (yes, cream and all)
  2. In a large mixing bowl; blend the softened cream cheese with the oreo crumbs until a thick mixture is formed
  3. Form 1" balls and place on a parchment paper lined tray, freeze for at least one hour.
  4. Melt your chocolate (adding a dab of shortening often helps when melting chocolate chips) - remove a handful of oreo balls from the freezer at a time, dip them in the chocolate.
  5. Rachel Note - I find that using a large spoon and a fork is the easiest way for me to ensure that the entire ball gets covered in melted chocolate and then transferred with the least amount of mess to another parchment lined tray for cooling
  6. Once the dipped truffles are on the parchment lined tray, you can allow them to harden, or if topping them with more crushed oreos or crushed peppermint pieces - top while the chocolate is still warm
  7. Store in the freezer or refrigerator if not serving immediately
