I’m going to show y’all the video and then share the insanely delicious and easy recipes.

Now that you’re rockin’ to the tunes and drooling over the recipes.. I’m going to share a few recipes with you.

As part of my Kitchenista “ista-ness”  I got to host a Spring Brunch House Party and had friends over to eat, play, laugh and welcome Spring.

The biggest hit of our Spring Brunch had to be the Scalloped Potatoes.  They were kind of ridiculously easy to make and I must admit, that while I’ve always been a bit intimidated by scalloped potatoes… these potatoes were crazy easy to make and only could have been easier if I’d had a mandolin.   Still, slicing each potato by hand.. not really that big a deal.

With Easter this weekend and many other spring parties and summer bbq’s coming up.. this is a recipe that you need to bookmark, it’s delicious, simple and crowd pleasing.

Scalloped Potatoes

Recipe: New Look Scalloped Potatoes and Ham

Ingredients

  • 4 1/2 lb red potaotes (9 ish, cut into 1/4 inch thick slices)
  • 16 oz Fat free Sour Cream
  • 3/4 lb (12 oz) Velveeta, cut into 1/2 inch cubes
  • 1/2 lb Oscar Mayer Smoked Ham, chopped
  • 4 green onions
  • 1/4 C Kraft Grated Parmesan Cheese

Instructions

  1. Heat oven to 350
  2. Cook potatoes in boiling water in large covered saucepan 10 to 12 minutes or until potatoes are JUST tender.
  3. Remove 3/4 of the potatoes; place in a large bowl. Add sour cream and mash until smooth. Stir in Velveeta, ham and onions. Gently mix in remaining potato slices.
  4. Spoon into a 9X13 baking dish that has been coated with baking spray; top with parmesan.
  5. Bake 30 minutes

Quick Notes

* I used 6 green onions stalks * I used the Kraft 3 Cheese Blend because it’s my favorite

Variations

* I added 2 tsp fresh ground pepper

I wish that I’d gotten a good picture of this macaroni and cheese.  It was silly easy to make and everyone devoured it.  I actually caught Nathan eating it cold out of the serving bowl at the end of the day.
I used wheel shaped pasta because when I went shopping I had the 3 yo Monkey with me and that’s what he requested.

Recipe: Easy Macaroni and Cheese

Ingredients

  • 2 cups (8 oz.) elbow macaroni, uncooked
  • 3/4 lb. (12 oz.) Velveeta cheese product, cut up
  • 1/3 cup milk
  • 1/8 tsp. pepper

Instructions

  1. Cook macaroni as directed on package; drain well. Return to pan.
  2. Add remaining ingredients; mix well. Cook on low heat until Velveeta is melted, stirring frequently.

Quick Notes

I added: * 1/4 C Cream Cheese * 1 extra Tbsp pepper * used the whole 16 oz of Velveeta Quite seriously y’all.. this was the EASIEST and most delicious Mac and Cheese I’ve ever made

Variations

* I used the wheel pasta because that’s what the 3 yo wanted when we were at the store.

Cheesy Salsa Mini Meatloaves

So y’all know that I’m doing the Two Weeks of Recipes with Sam’s Club and Kraft and this recipe is so fabulously DEELISH that I had to share it with you.

It was simple, delicious, flavorful, moist, tonguegasmic and just awesome!  I have a hard time getting Nathan to eat meatloaf, he is just not a fan and while I love meatloaf I have never understood the whole ketchup sauce topping glaze thing.  So when I opened my menu planner (get yours here) and saw Cheese & Salsa & MINI meatloaves well… my interest was piqued and I have to admit there might have been a bit of mouthwatering going on.

We have friends and a brother visiting right now and that means there are THREE additional men to feed, big men, the kind over 6 feet tall with big Texas men appetites.  EVERYONE gave this meal and thumbs up and requested more, more, more.

So.. here you have it.  I doubled the recipe to accommodate the 6 of us and I prepped the meat hours ahead of time and covered it and put it in the fridge.

Cheesy Salsa Mini Meatloaves

from Kraft

  • 1 lb ground beef
  • 1/2 C finely chopped onions (I doubled this, we like onions)
  • 1 egg
  • 12 PREMIUM Saltine Crackers, crushed
  • 1 1/2 C KRAFT Mexican style finely shredded Four Cheese Blend, divided
  • 1 C salsa, divided
  1. Heat oven to 400
  2. Mix first 4 ingredients with 1 C cheese and 1/2 C salsa
  3. (at this point I covered it in a mixing bowl and let it sit for a few hours, easy do ahead and I think it lets the flavors blend for extra nomminess)
  4. Press evenly into 12 muffin cups that have been sprayed with cooking spray.
  5. Use the back of a spoon, or your fingers, to make an indention in the center of each ‘muffin’.
  6. Place muffin tins on a foil covered baking sheet (oops, I forgot that step)
  7. Bake 20 to 25 minutes (18 in my oven)
  8. Top with remaining salsa and cheese, bake for 3 minutes or until cheese is melted.

I served this with Garlic Mashed Potatoes and a Green Salad.

Prepare to be amazed as these suckers fly off the plates and disappear into extremely happy tummies.

Cheesy Salsa Mini Meatloaves in Pan

Gettin’ Cheesy with Kraft Singles

In just a couple of days I am going to be getting cheesy with Kraft Singles in Los Angeles at the Kraft Singles sponsored Grilled Cheese Invitational !

Sing it with me now…

“Gettin’ cheesy with it.. nah nah nah nah nah nah nah, nah nah nah nah, nah nah!”

An easy recipe for the All American Classic Grilled Cheese is:

  • 2 slices of bread (Texas Toast is the best y’all)
  • 2 slices Kraft Singles Cheese
  • 2 Tbsp butter
  1. Spread the butter on one side of each piece of bread, place the bread on a medium-high heat skillet, butter side down, top with two slices of Kraft singles cheese and then top with the other slice of bread. Cook on each side for 3 to 4 minutes or until it has reached your desired golden crispy deliciousness on the outside and melted ooey gooey, cheesy nomaliciousness on the inside.

I have already shared my favorite grilled cheese with y’all  and even shown y’all a video of me making it!

The response to that video, and my accent (I don’t hear an accent, but whatever) was so much fun that I made y’all another video on my awesome FLIP video camera of me making The All American Grilled Cheese sandwich!
