Quick Summer Berry Cakes

So many of my childhood memories involve stained fingers and full bellies from berry picking out behind our house, and my mom’s dewberry pies.

While I don’t have berry patches available to my kids, I still feel compelled to fill their summer days with fresh berries and delicious desserts.

 

 

When we had friends over for spice rubbed steaks  a few weeks ago, these Mini Berry Cakes were the delicious cap to a wonderful evening.

I’ve shared a version of this Pineapple Summer Cake before, however, I’ve come to love individual servings of food for their portability, ease of serving and let’s be honest y’all… their cuteness 🙂

 

 

 

I’m so excited to share this updated recipe with y’all!

It’s quick and easy and the ‘filling’ can be made ahead of time!

These Summer Berry Cakes are so easy that it’s barely a recipe…

Mix… Bake… Top… Serve…

Quick Summer Berry Cakes

Quick Summer Berry Cakes

Ingredients

  • 1 3.4 oz pkg French Vanilla Pudding Mix
  • 1 20 oz can crushed pineapple (don't drain)
  • 2 C whipped topping
  • 1 tsp vanilla bean paste
  • 3 C fresh berries
  • 1 dozen mini angel food or pound cakes

Instructions

  1. Blend together the pineapple, pudding mix, whipped topping, and vanilla bean paste
  2. Put in the refrigerator, if not using immediately
  3. Once ready to serve, pre-heat the oven to 375...
  4. Place the cakes on a baking sheet in the oven and bake about 7 minutes, or until golden and warm.
  5. Spoon the filling on top of the cakes and top with fresh berries
  6. Serve on an additional scoop of filling for extra deliciousness

    Sounds berry berry perfect! And I’m a big fan of “individually” sized foods too – helps me keep potions under control … and I definitely need that during dessert 😉

    I’m a big fan of individual serving sizes for desserts. That’s not to say that I would say no to a second helping. I certainly would have seconds of yours shown here!
