Can we take a minute to talk about love?  Sharing, spreading, showing love…  There is so much going on in the world that is causing strife, negativity, arguments, and confusion, and while I do believe we should always stay on top of information and informed; I also believe that we should do what we can to spread love, kindness, joy, and make others feel joy.

If each of us took just a minute out of our day to send someone a message letting them know what they mean to us, send a note to make them smile, use whatever our gifts are to make someone else feel special; in my case, that’s making food for people, wouldn’t the world be a better place?

When HEB reached out to me to ask if I would be willing to partner with them to make something delicious using their Baker’s Scoop Flour and their new Select Ingredients Artisan Frosting Mix, I said yes, because baking and trying new products, plus it’s February, which, in addition to being Black History Month, is also share all the love month, right?  I think we can all agree that spreading joy and happiness is something we should all be focusing on a little more.

Off to the store I went, armed with a gift card and my imagination – two powerfully fun things to have in a store filled with deliciousness 🙂 First thing I did was go to the baking aisle and picked up a bag of Bakers Scoop All Purpose Flour and then I checked out the Frosting Mix selection.

The raspberry one immediately caught my eye, and in the space of time it took me to pick it from the shelf and put it in my cart, I had the recipe idea already swirling around in my head.

Is your mouth watering yet?  Mine was as I was picking out the cartons of raspberries, and adding the rest of the ingredients to my cart. 

I stopped in the florist area and added a couple of love themed signs and a bag of rose petals and practically skipped to the checkout line.

I couldn’t wait to get started!  I seriously love playing with food, y’all 🙂

The first thing I did was rinse the raspberries, melt my favorite dark chocolate melting wafers, dip the raspberries in the chocolate and lay them on parchment to wait.  The only problem with these little chocolate dipped raspberries…. they’re ridiculously good, bite-sized, and my kids wouldn’t quit stealing them off the parchment! Not that I blame them, I may have sampled 2 or 10

I usually make all of my frostings from scratch, because I’m a snob that’s my preference, but one of the biggest requests I get is recommendations for good homemade tasting frosting, without the whole pesky homemade part 🙂 Well, I can tell y’all that I will definitely be recommending the Select Artisan Frostings  that HEB has available.  Currently, Raspberry, Mexican Hot Chocolate, and Cappuccino are the only flavors available, but I think if we ask nicely and frequently, there may be more flavors coming down the line!  The frosting has no artificial flavors or ingredients; and all you do is add milk, cream cheese, and butter and follow directions and BOOM you have a practically from scratch homemade frosting that one of Princess’ best friends upon tasting it described it as marshmallowy pudding deliciousness.  High praise from the teenagers 🙂

These cupcakes are incredibly easy to make, the frosting is simple, and with the addition of the chocolate dipped raspberries, these are an impressively beautiful treat that’s sure to make anyone feel special.

As beautiful as these look in the pictures, they’re even better looking in person, and easy to package for giving.

I added a few rose petals to some ‘goody bags’ that I always have on hand, think kids party favor bags, added a cupcake, and then sealed the bag with a twist tie.  The rose petals made this look extra special <3 

Okay, enough chatter… on to the recipe!

Chocolate Dipped Raspberry Cupcakes

This chocolate dipped raspberry cupcake recipe is easy to make, beautiful to look at and with the fresh raspberry center, and the dark chocolate dipped raspberry garnish, they're a perfect Valentines day treat

Chocolate Cake

  • 2 1/4 Cups HEB Bakers Scoop All Purpose Flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 Cup unsalted butter
  • 1 3/4 Cups granulated white sugar
  • 2 large eggs
  • 3 ounces unsweetened chocolate melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 1/4 Cups water
  • 24 raspberries


  • HEB Select Ingredients Artisan Frosting
  • 4 ounces cream cheese room temperature
  • 2 Tablespoons unsalted butter room temperature
  • 2 Tablespoons milk


  • 24 raspberries
  • 1/4 bag 10 ounce bag dark chocolate melting wafers



  • Preheat oven to 350°F
  • Line 24 cupcake cups with baking cups, place a raspberry in the each baking cup
  • In a large mixing bowl combine: flour, baking powder, baking soda, and salt; set aside
  • In a large mixing bowl, beat the butter on medium to high for about 30 seconds. Add sugar, and cream until fluffy. Add the eggs one at a time, beating well after each one.
  • Add in the melted chocolate, vanilla, and chocolate chips
  • Add dry mixture and 1 1/4 cups water alternately to the wet mixture, mixing between each addition, until just combined.
  • Pour the batter over the raspberry in the baking cups - fill each cup about 1/2 full
  • Let the batter rest in the tins for 5 minutes to allow it to settle
  • Bake for 15 to 18 minutes; start checking at 15 minutes - the cupcakes are ready when a raw strand of spaghetti or a toothpick comes out with crumbs, but no wet batter
  • Cool on a wire rack completely before frosting


  • Follow the directions on the back of the box


Use a large piping bag and swirling tip to pipe the frosting just in the center of the cupcakes, top with a chocolate dipped raspberry and allow the frosting to set before serving. If it's humid in your kitchen, you may want to set the frosting in the fridge to stiffen up before piping onto the cupcakes.
The surprise raspberry inside these cupcakes, combined with the rich chocolate cupcake, the creamy raspberry frosting, and the decadent dark chocolate dipped raspberry make these a delight with every bite!
