Spicy Pulled Pork Baked Taquitos with Cool Avocado Cream Dipping Sauce

The Taquitos

  • 3 C mixed blend cheese
  • Spicy Pulled Pork
  • 1 can black beans drained
  • 1 can kernel corn drained
  • 20 flour tortillas
  • cooking spray
  • kosher salt


  • Preheat oven to 425°F
  • If your pulled pork is still warm in the slow cooker - move on to step 2, if it's not - warm up the pulled pork.
  • Drain the beans and corn and mix them into the pulled pork and simmer over low heat while the oven heats up, and you prep the tortillas and cheese.
  • **Tortillas are tricky - if you have good tortillas, they will roll with no issue .. some tortillas you need to warm up with a damp paper towel before rolling****
  • Grab a tortilla, and place a bit of cheese on the tortilla - place some spicy pulled pork on the tortilla and then tight roll the tortilla and place seam side down in your greased baking dish.
  • Repeat this until your baking dish is full.
  • Bake in the oven about 20 minutes, or until the taquitos are golden brown and crisp.


You can cut these in half to make them go farther, and make them more party friendly, or you can serve them whole.
Serve with creamy avocado dipping sauce.
