Cranberry Raisin Bran Muffins

[donotprint] My family and I love Bran Muffins.   I grew up eating them and now my kids are growing up eating them.

They’re filling, healthy and chock full of delicious fiber goodness.

While I was browsing my recipe pantry this past weekend I found this recipe card written by my Granny Granny's Raisin Bran Muffins

So, this past weekend, we made some Raisin Bran Muffins — with a bit of a twist — a bit of a modification on Granny’s recipe.

We added cinnamon and craisins
Cranberry Raisin Bran Muffins

and these muffins flew off my cooling racks!

I don’t have the usual step by steps because I was wrangling two very eager helpers ;-)

: Cranberry Raisin Bran Muffins
  1. 15 oz of raisin bran cereal
  2. 3 C. Sugar
  3. 5 C. Flour
  4. 2 tsp. baking soda
  5. 2 tsp. salt
  6. 4 eggs
  7. 1 1/4 C. unsweetened applesauce
  8. 1 qt. buttermilk
  9. 1 to 2 tsp. cinnamon
  10. 2 C. Craisins
  1. Pre-heat oven to 375
  2. Spray muffin tins with non-stick baking spray
  3. In a large bowl sift together Flour, Sugar, baking Soda, Cinnamon and Salt
  4. Add Cereal and stir well
  5. Add Craisins
  6. In another large bowl – Mix together Wet ingredients
  7. Slowly add Dry ingredients to Wet ingredients
  8. Use an ice cream scoop to fill the muffin tins 3/4 full
  9. Bake for 18 to 22 minutes or until tops spring back
  10. Cool in tins for 5 minutes then remove to a cooling rack

Delicious warm with apple butter

Use 1 C. Craisins and 1 C. Raisins Or 1 C. Craisins and 1 C. chopped walnuts

Meal type: breakfast

Yield:  About 2 dozen muffins

  2. I love old recipe cards, particularly handwritten ones! We have a family bran muffin recipe too, which uses bran, not bran cereal, but I’m fascinated by the idea of using Raisin Bran cereal. What a cool idea! I also like the idea of subbing applesauce for oil, and those craisins look scrumptious. I’ll still keep making mine, but I’m looking forward to giving your recipe a try too!         So I made your muffins today; all 4 dozen of them. Luckily, I was making them for a family dinner & was able to pawn some off onto people. There were very good & I liked the added craisens. The only thing I did different was switch out 2 of the 5 cups of flour with wheat flour. Thanks for sharing :)

    I grew up on that same recipe! I make it once in a while, and I usually change it up a bit too. It’s so yummy, and the batter keeps in the fridge for a while, which is nice if you want to have fresh muffins some morning…

  14. The muffins look fabulous! I love the handwritten recipe card. I’m late to the party this week, but sharing a very EASY stovetop method of making Chicken Parm Pasta. Not only does it keep the oven off in the hot months, it’s a FRUGAL choice too because the recipe uses 2 chicken breasts which will feed a family of 5–6 with this recipe. :)
