Salsa, Pico, Avocado… Oh My

 

Summer is here.

BBQ season is on.

One of my favorite things about summer is impromptu parties and get togethers.

Like tonight, my friend Kellie invited us over and then delighted us with a yummy avocado pico paired with ice cold beer, fresh squeezed lime and good music – really, could you ask for more?

I didn’t break out my camera or my notebook and ask for details or demand lighting adjustments, pretty dishes or any of those things I do when I’m at home photographing a recipe.

Instead, I snapped that pic with my iphone and grabbed a handful of deliciously salty chips, cracked open an ice cold beer and laughed until I cried and just lived in the moment.

It got me thinking.

What’s your favorite quickly thrown together treat?

What dish do you turn to when you have friends coming over, or do you sometimes throw caution to the wind and try something new?

From what I could see of Kellie’s amazingly yummy avocado pico, here’s a breakdown:

Avocados

Fresh Tomatoes

Serrano Peppers

White Onion

Limes, lime juice and more limes

Garlic powder

salt and pepper

So to y’all- I pose the question – have you ever made avocado pico?  How do you serve it?  How do you make it?  What are your tips and tricks?

Kellie’s avocado pico was pretty amazing, but since I wasn’t there from the get go – I don’t know the amounts and specs…if you have them, share them!!!  I really want to play with this recipe and make it because it was sooo good!

We don’t have a specific dish that we always make for get-togethers. But I’m always expected to bring some sort of dessert. I guess that’s my speciality. :-)

Irish Catson - Wow, that dessert is really perfect for summer. Avocado is my favorite fruit so I always love to make dessert with avocado as a main fruit. I really love eating any sorts of desserts and I really love to eat that sort of dessert.

Michelle - Mmmm that looks good! If I have people coming over unexpectedly, I’m totally looking in the fridge and seeing what I can toss out. It really varies, but I have a few go to items. I’ll have to try the avocado pico. My guacamole is somewhat similar to that, but not quite there. I’d love to see if you get it down with the ratios!
