Homemade Taco Seasoning

I love making my own seasonings, being able to control the salt, heat, savoriness, sweetness – etc.

Down here in Texas we eat a lot of black beans and steaks, tacos, fajitas, taco salads, nachos, quesadillas, tostadas – so a staple of almost every kitchen I’ve ever been in is Taco Seasoning.  You know, those little packets that you dump in, add water and simmer.

Well, over the past year it became one of my challenges to myself to find and perfect a taco seasoning that I could make at home and in doing so, control the amount of salt and preservatives.

Behold one of my new favorite recipes, homemade taco seasoning!

When Nathan and I decided to try The 17 Day Diet one of the things that challenged me was introducing my steak and potatoes boy to new choices like ground turkey and getting him to not only eat it, but like it.

Made with Comino – Crushed Red Pepper Flakes – Garlic Powder – Coriander – Oregano and more – this taco seasoning is easy, colorful, delicious and wonderful.

Did I mention ridiculously delicious?

For today, y’all are getting the secret to that recipe’s success – my Homemade Taco Seasoning

Homemade Taco Seasoning

Prep Time: 10 minutes

Approximate Time: 10 minutes

Yield: 1 3/4 C

Delicious homemade taco seasoning.

Ingredients

  • 1/2 C + 2 Tbsp. Chili Powder
  • 1 Tbsp Garlic Powder
  • 2 1/2 tsp Onion Powder
  • 2 1/2 tsp Crushed Red Pepper Flakes
  • 1/4 C Coriander
  • 1 Tbsp Oregano
  • 1 Tbsp + 2 tsp Smoked Paprika
  • 1/4 C + 1 Tbsp + 1 tsp Comino (cumin)
  • 1 Tbsp Salt

Instructions

  1. Measure out all the ingredients
  2. Combine, blending completely
  3. Use 2 Tbsp of seasoning per 1 lb of meat

Garlic Burgers with Chipotle Caramelized Onions and a Giveaway

A couple of weeks ago I shared my favorite Game Day Grilling Tips with y’all.
That same day, Nathan and I hosted a Game Day Cookout for the UT vs OU game (let’s just not talk about the score — mmmmmkay!)

There was a ton of food, friends, football, cheering, shouting, laughter and full tummies. All in all, an extremely good day.

For pre-game snacks I made; a football shaped cheeseball, a veggie platter and a killer spinach & artichoke dip (recipes coming)

For the main event I was given Bush’s Onion Baked Beans (do we sense a theme?)

Brown sugar, specially cured bacon and a delicate blend of spices are slow cooked with onions to create our Onion Baked Beans.

I paired these delicious sweet and slightly savory baked beans with these ridiculously delicious and mouthwateringly large 1/2 lb onion burgers.

To create these burgers and feed our big hungry crowd, I started with 7 pounds of ground chuck, 2 heads of garlic, 2 onions and 1/4 C of meat seasoning.  I chopped the garlic and onions and then mixed everything together in a big bowl.

Then, I used one of my new favorite kitchen goodies, the hamburger patty shaper, to make giant 1/2 lb burger patties

This yielded 13 full size patties and one smaller ‘jr’ burger, which I loaded on a freezer paper lined tray

I put the patties in the refrigerator to chill for about 3 hours – the cold patties cook better and don’t fall apart on the grill! (old restaurant trick)

About 30 minutes before we were ready to cook the burgers, I got my chipotle caramelized onions started.
I ring sliced 6 medium size yellow onions and added them, 1 stick of butter, 2 chopped chipotles and 1 Tbsp adobo sauce to my large saucepan.

I allowed that to just simmer and caramelize, stirring occasionally. I can’t tell you how many of the guys I caught snagging onions out of the pan while they were cooking – it was almost comical. They reminded me of Monkey with cookie dough :-)

Nathan put the patties on the grill, flipped them each one time and holy moses, y’all — the smell was absolutely mouthwateringly out of this world!

I laid out a buffet of different cheeses, burger toppings and everyone followed their noses to the stove where the caramelized onions and beans were simmering

We topped our burgers with chipotle caramelized onions and pretty much nothing else was needed.
The silence that fell over my house while everyone ate — well, the only sounds you could hear were chewing, moans of delight and that, was all she wrote ;-)

The Bush’s Onion Baked Beans were an absolutely perfect accompaniment to the burgers!!

The only problem — everyone started eating so quickly and devoured their burgers so fast that I never got a picture of a *built* burger or plate with beans on it!  Which, in hindsight — is actually a pretty huge compliment :-)

We had such a wonderful time, the food was a HUGE hit and I sent everyone home with a coupon to get some Bush’s Baked Beans for themselves!

Homemade Meat Seasoning

I love spices and I love making my own seasoning mixes.

Waaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaay back in the beginning of my blogging days I shared my Simple Seasoning mix with y’all.

With the recent weight loss that Nathan and I’ve experience 35 pounds and 23 pounds we’ve been doing much, much more cooking at home and relying on homemade seasoning mixes (with the exception of my favoritest seasoning mix from Zatarains)and I realized it was time to share that spice mix again, since we’ve made a much reduced salt version of it.

Even if I’m not grinding fresh herbs and spices I like to mix my seasoning blends in my molcajete to help season it.

On to the homemade meat seasoning!

Blend – Salt, Onion Powder, Garlic Powder, Smoked Paprika, Cayenne, White Pepper, Black Pepper, Cinnamon and Cumin

The amount of cayenne that I list is what works for us, if your family isn’t full of native Texans or you are worried about the spice factor – start small, it’s much easier to add than take away.

Homemade Meat Seasoning

Prep Time: 5 minutes

Approximate Time: 5 minutes

Yield: 1 Cup

Delicious homemade meat seasoning, perfect for hamburgers, poultry, fish

Ingredients

  • 2 Tbsp Salt
  • 1/4 C Garlic Powder
  • 1 1/2 Tbsp Onion Powder
  • 1 Tbsp Smoked Paprika
  • 1/4 C Black Pepper, fresh cracked if possible
  • 1 1/2 Tbsp White Pepper
  • 1 tsp cayenne
  • 1 tsp roasted cinnamon

Instructions

  1. Blend in a molcajete, spice grinder, bowl - whatever you have handy
  2. Keep in a mason jar, plastic baggie, clean spice jar etc...
